Ernesto Hernandez is currently Principal Consultant with Advanced Lipid Consultants, Tomball, TX.
- He is former Director of Process Development at Omega Protein Inc., Houston, TX
- He is also former Head of the Fats and Oils Program/Graduate Food Science Faculty at Texas A&M University, College Station, TX. Prior to this he was Food Technologist at the United States Department of Agriculture-Citrus and Subtropical Prod. Lab. Winter Haven, FL.
-His education includes a Ph.D. in Food Engineering from the University of Massachusetts; M.S. in Food Science and Technology from Oregon State University; and a B.S. in Chemical Engineering from the University of Guanajuato, Mexico.
- E. Hernandez is coauthor of 2 books ("Processing and Nutrition of Fats and OIls" and "Omega 3 OIls: Applications in Functioanl Foods"), holds 2 patents on specilaty lipids and processign, and has published over one hundred articles in several areas of lipid and food product development.
- E. Hernandez has extensive experience in implementation of current and new technologies in edible oil processing. Including process optimization, quality assurance, and good manufacturing practices. Key products he has developed currently in the market include: foods and beverages fortified with bioactive lipids, new antioxidant formulations for omega 3 oils and edible oils blends, new oil purification techniques, and chemical and enzymatic modification of lipids for food, feed and industrial applications
