Kunal is graduating Ph.D. candidate in Food Science at the University of Saskatchewan. His research areas include food-grade nanoemulsions, explore the use of protein and biopolymers in making Emulsions gel and study their rheology and digestion behaviour. He obtained his master's in Dairy Science from National Dairy Research Institute, India. and worked on the technology to develop probiotic cheese as part of his master's research project. He has three years of experience in the food industry as a production and Quality Supervisor. He also worked for 5 years as a faculty and taught food science subjects at the Anand Agriculture University in India. Recently, he has been nominated for the Young Scientist award by LUM GmbH, Germany for using a LUMiSizer, an analytical centrifuge, to study the nanodroplets packing and interaction behaviour under applied centrifugation force.
