Purpose: Chewing gums are commonly produced as pellets, balls, or other shapes with hard coatings to allow for a pleasant crunch upon chewing. The coating can be formed by applying layers of sugar or sugar alcohol (or polyhydric alcohol or polyol) syrup to batches of gum cores and then allowing the syrup to crystalize and harden. Crystalline xylitol can be used as a bulking agent and coating material in sugarless chewing gums. Xylitol provides sugar-like sweetness and anti-cariogenic properties that are desirable and useful in gum coatings. Traditional xylitol-based coatings are applied using a pouring method which can present some challenges. Xylitol tends to crystalize very quickly relative to sugar and other sugar alcohols, and as such, can result in uneven, bumpy, or pitted coating surfaces when applied through traditional poured coating methods. INSTACOAT™ CFC is a xylitol based, high-speed, optimized chewable & crunchy film coating material suitable for use with aqueous solvent systems using standard film coating application techniques. It offers low calories with crunchiness at optimum weight gain and is suitable for all coating machine designs and sizes.
Methods: Uncoated commercial chewing gum pieces were used as the substrate. A conventional pan equipped with a Spraying Systems gun was used for the coating trial. Instacoat CFC was applied to the gum pieces at a target weight gain of 18%. All the critical process parameters (Product Temperature, Spray Rate, Pan Speed, and Atomizing Air Pressure etc.) were studied and optimized. The Instacoat CFC Coated chewing gums were assessed for visual appearance, crunchiness and coating defects.
Results: Chewing gum pieces were successfully coated using Instacoat CFC with the achievement of a smooth, elegant finish in significantly less time than required for the traditional pouring process (Table no. 1). The coating operation was completed without any process concerns and nil coating defects (Table no. 2). Please refer to Image 1 for images of the Gums Coated with Instacoat CFC.
Conclusion: Instacoat CFC coating was executed successfully with the production of chewing gums with very smooth and uniform surfaces. Chewing gums coated with Instacoat CFC were of excellent appearance, taste, mouth feel and crunchiness.
