Sashimi and deep fried whale lean meat are popular nation-wide regardless of communities' past. However, former whaling communities in western part of Japan developed their preference for skin, blubber, tongue, and intestines rather than lean meat. Such parts of meat need to cook properly to use the characteristics of the ingredients. Such whale meat dish are mostly appreciated during new year celebration and other special occasions. Such elevated feeling also contributes to the taste. The presentation will explain how local whale meat foodways in Japan contrary to the prevailing political belief as national. To understand how rich whale meat foodways in Japan, we need to understand local context to whaling history and whale meat dish.
