Tasting Outside the Oral Cavity (View Point)

Recent evidence documents the presence of taste receptors throughout the GI tract, as well as in many other peripheral sites. The nature of these receptors and the ligands they bind are often the same as those in the oral cavity. These discoveries raise new questions with important health implications. To what extent is there a continuity of sensory and nutrient information flowing from the oral cavity through the extent of the GI tract and what are the implications of activating or disrupting this information flow? Are compounds once thought to be biologically inert in the GI tract actually modulating processes such as digestion, appetite and nutrient absorption? This session will review the evidence for extra oral “taste” sensing and its potential health implications. Evidence from cell culture, animal models and human trials will be presented.

Robert F. Margolskee, MD, PhD is Director & President of the Monell Chemical Senses Center. Dr. Margolskee has been a pioneer in the application of molecular biology and transgenic animal models to the study of taste transduction and chemosensation. He has made numerous seminal discoveries in the taste field, including the identification and molecular cloning of taste specific receptors, G proteins, channels and other taste signal transduction elements. Dr. Margolskee’s research focus has been on the molecular mechanisms of taste transduction, utilizing molecular biology, biochemistry, structural biology, electrophysiology and transgenesis to study the mechanisms of signal transduction in mammalian taste cells. He has also been a pioneer in the function of taste-like cells in gut, airways and most recently in gingiva.

John McLaughlin is Professor of Gastroenterology and Nutrition in the Faculty of Medicine, Biology and Health, University of Manchester, and Head of the Division of Diabetes, Endocrinology and Gastroenterology. His BSc in Physiology, Medical and PhD degrees were all awarded by Manchester. He was awarded both the British Society of Gastroenterology and the European 'Rising Star in Gastroenterology' Research Awards.

John’s basic research interests are in gastrointestinal physiology in health and disease particularly the interactions between nutrients and the gut epithelium, gut inflammation, appetite regulation and gut-to-brain signalling, alongside growing interests in clinical service research and e-health developments in guided self-management.

Spending 50% of his time as a clinical Consultant Gastroenterologist he manages the clinical GI physiology service at Salford Royal University Hospital, and leads the Comprehensive Research Network for Gastroenterology and Hepatology research studies in Greater Manchester.
