This informal, interactive session highlights four outstanding dietetics professionals who have taken their careers in exciting, non-traditional directions. This expert panel includes a registered dietitian nutritionist working as a Certified Eating Disorder Dietitian Supervisor, an expert in nutrition messaging for the media, the Food and Nutrition Director for Cooking Light magazine, and the sports dietitian for the U.S. Department of Defense. Attendees at this session will be inspired to reach for their highest ambitions.

Mary Beth Kavanaugh, MS, RDN, LD, FAND

Mary Beth Kavanagh is currently employed as Program Cooridnator of the BSDN Coordinated Program at Keiser University in Lakeland Florida. She was previously employed for 18 years as Senior Instructor and Director of Bachelor's/Master's Education at Case Western Reserve University in Cleveland Ohio. She has served as Delegate from Ohio to the House of Delegates and is currently appointed as a member of the Committee for Lifelong Learning.

Lorraine Weatherspoon, PhD, RDN

Lorraine J. Weatherspoon PhD, RDN, professor in Human Nutrition and Director of the Didactic Program in Dietetics in the Department of Food Science and Human Nutrition at Michigan State University is a native of South Africa, where she completed her BS in Dietetics and internship. She worked for 5 years as the only dietitian in a 750 bed hospital before coming to the US and completing a MS and PhD at West Virginia University and The Pennsylvania State University respectively. She teaches two senior dietetics classes (Lifecycle Nutrition and Global Foods and Culture) and conducts research. Her research focus, grant funding and publications are in the area of “Diet-Related Health Disparities: Role of Dietary, Lifestyle and Ecological Factors in Risk, Prevention and Management. She has been integrally involved in examining the new and growing problem of Type 2 diabetes in Children and Adolescents both nationally and in Michigan; and working closely with extension and Family and Child Ecology to develop effective patient centered approaches to better diabetes management overall. Dr. Weatherspoon is nationally and internationally regarded as a leading expert in “family centered” curriculum development and community-based nutrition research. A secondary research interest is child survival especially from an international perspective. Dr. Weatherspoon is committed to the dietetics profession and dietetics education through active engagement at state and national levels on academy and dietetics-related committees. She is the recipient of numerous awards including most recently the Excellence in Practice Outstanding Educator Award of the Academy of Nutrition and Dietetics.

Jessica Setnick, MS, RD, CEDRD

Jessica Setnick has one of the most recognizable names in the nutrition counseling world, thanks to her engaging and charismatic presentation style, her unique point of view, and her genuine ability to connect on a deep level, even from the podium. She has spent her twenty year career as an RDN developing eating disorder treatment protocols in every level of care and shares her wealth of knowledge with health professionals and the public in every possible format, including the Eating Disorders Boot Camp: Training Workshop for Professionals audio course, The Eating Disorders Clinical Pocket Guide, The Academy of Nutrition and Dietetics Pocket Guide to Eating Disorders, as a Certified Eating Disorder Dietitian Supervisor and mentor to treating professionals around the world, and in her many, many, many presentations. Jessica’s mission is to work toward a world where everyone who needs care for eating issues has access to qualified professionals, and no one is turned away due to insurance issues or mistaken stereotypes.

Chris Mohr, PhD, RD

Chris Mohr is a nutrition expert who has helped millions of people through his writing, speaking and media interviews over his 20+ year career. He is a consultant with the World Wrestling Entertainment (WWE) Organization and worked closely with the Cincinnati Bengals as their sports nutritionist for years. Other current and past clients include Under Armour, Johnson and Johnson, the Johnson and Johnson Human Performance Institute, TRX, Deloitte, General Mills Bell Institute of Health and Barilla among others. Dr. Mohr’s expertise has offered him the opportunity to speak at the White House, the CIA and to audiences in over 10 countries and almost all 50 states.

He often appears on TV as a nutritional guest expert, including an appearance with Chef Emeril Lagasse and CBS’s ‘The Talk’. He was the nutrition consultant and expert for the NY Times Bestseller, “LL Cool J’s Platinum Workout” and worked closely with Fitness Celebrity Denise Austin & Mario Lopez, to write the nutrition sections for their books. Dr. Mohr has written over 500 articles for consumer publications, including Men’s Health, Shape, Eating Well and Cooking Light. Dr. Mohr has Bachelor and Master of Science degrees in Nutrition from The Pennsylvania State University and University of Massachusetts, respectively. He earned his PhD in exercise physiology from the University of Pittsburgh and is a Registered Dietitian.

Brierly Horton, MS, RD

Brierley Horton, M.S., R.D. is Food & Nutrition Director for Cooking Light, which includes Cooking Light magazine and CookingLight.com, a Meredith Corporation women’s lifestyle brand. Prior to her current role, Brierley was the Nutrition Editor of EatingWell Media Group, which includes EatingWell magazine and EatingWell.com, another Meredith brand. She contributed to several of EatingWell’s award-winning features. Brierley has appeared on national and local broadcasts, including TODAY, Access Hollywood Live, Better TV and MSNBC Live with Thomas Roberts.

Brierley served as President for the Vermont Academy of Nutrition and Dietetics and in 2011 was chosen as the Emerging Dietetics Leader by the Vermont Dietetic Association. She holds a master’s degree in Nutrition Communication from the Friedman School of Nutrition Science and Policy at Tufts University. A registered dietitian, Brierley’s undergraduate degrees are in Dietetics and Nutrition and Food Sciences from the University of Vermont.

Lori Tubbs, MS, RDN

Lori has been working as a civil service military dietitian for over 20 years and has worked in the special operations community since 1999. A known trailblazer, Lori was the first nutritionist in Navy Health Promotion who began worksite nutrition programming with the emphasis that everyone needed nutrition coaching rather than just those that were not meeting military standards. She soon was invited on aircraft carriers to help with better food options and teach better eating strategies while underway. Within two years of her career in civil service, she became involved with special operations nutrition working with elite military athletes and setting up strategies for better nutrition environments. She was the first nutritionist involved full time with the SEAL teams and became the subject matter expert at many special operations commands that required nutrition support. She co-wrote the Special Operators Nutrition Handbook and has spoken at several military and civilian conferences. Currently, Lori has single handedly developed a training table for SEALs and has trained over 50 Navy and Air Force culinary specialists as well as over 25 civilian catering staff that helps feed her Navy SEALs around the country. Lori also taught at Johnson and Wales Culinary Arts School and Norfolk State University over the 20 year span.
