510. Culinary Demonstration: How to Deliver Dynamic Cooking Demos On-Site, Online, on TV

Culinary demonstrations enable RDNs to communicate nutrition information to consumers; entertain their audiences; teach basic or advanced cooking skills; and showcase healthy recipes that are affordable, easy to prepare at home, and flavorful. Gaining the confidence to cook in front of a captive audience—on-site, online via a Facebook Live, or on TV—is a critical skill set for dietitians working in clinical, community, and private practice settings. During this session, three culinary RDNs will teach attendees how to organize and implement a dynamic cooking demonstration and provide a primer on assessing audience, location, equipment, recipe selection, and tips for cooking in front of a crowd or TV camera. One simple, nutrient-rich recipe will be demonstrated in three different ways to illustrate how recipes can be repurposed for different settings. Volunteers from the audience will be included in the cooking demo portion of this session.

Rebecca Lewis, MS, RDN

Rebecca Lewis is a Registered Dietitian on a mission to change the world by empowering people to take control of their health. She has a background teaching hands-on adult cooking classes at Whole Foods, providing cooking demos for children with the non-profit Cooking Matters, and working in the community to give on-site culinary inspiration and education. Her previous role as the head dietitian for HelloFresh has made her an expert at recipe development and nutrition analysis as well as culinary education and cooking demonstrations. Additionally, as an active media authority for health and wellness, she has conducted numerous TV and radio interviews as well as contributed to hundreds of health articles. Rebecca cheers on the community for their nutrition achievements and creates connections between themes everyone relates to; delicious, simple, healthy, homemade food.

Elizabeth Weiss, MS, RDN

Recipient of the 2015 Media Excellence Award from the Academy of Nutrition and Dietetics, registered dietitian nutritionist, Liz Weiss, MS, RDN has been passionate about helping consumers discover the joy of wholesome and delicious food for well over two decades. As a mom of two grown children, Liz advocates a real food approach to feeding families. She is the voice behind the food and nutrition podcast and blog, Liz’s Healthy Table, and the author of several cookbooks including the new coloring e-book series, Color, Cook, Eat! A pioneer in nutrition communications, Liz served as nutrition producer and correspondent for CNN from 1987 to 1992. She rejoined the network to create and host 50 Meal Makeovers cooking videos, which ran in 30,000 doctor’s office waiting rooms on the AccentHealth patient education channel. Liz is a savvy speaker and presenter, and she has conducted hundreds of live and taped TV interviews and cooking demos throughout her career.

Abbie Gellman, MS, RDN, CDN

Abbie Gellman, MS RD CDN is a chef and founder of Culinary Nutrition Cuisine LLC, a culinary nutrition company. Abbie has over ten years of Wall Street and hospitality/food and beverage consulting experience and over ten years of nutrition-related experience. Food & Nutrition Magazine recently presented Abbie with the 2017 Stone Soup Blogger of the Year award. Abbie originally started filming a variety of videos featuring recipes and nutrition topics nearly four years ago for a few select clients. In the Fall of 2017, she launched her own weekly culinary nutrition video series. In addition, Abbie regularly conducts in-person cooking demo’s for a range of audiences and venues. Abbie works with a wide variety of food companies/brands, hospitality/foodservice operators, and private clients; she also contributes to many publications. Abbie is a spokesperson, recipe/product/menu developer, teacher/educator, private chef, and culinary nutrition counselor.
