This session will describe the parallels between brewing beer and healthcare infection prevention and the processes used in the brewing industry that serve to prevent the transmission of microorganisms from batch to batch. Mr. Shawn Theriot, Quality Assurance Manager, from Deschutes Brewery in Bend, Oregon and Alicia Hicks, Deschutes microbiologist, will provide an overview of the current activities and quality assurance methods used in their brewery to protect their beer from microbial contamination including disinfection and sterilization, personal protective equipment use, and air quality maintenance. Come to the session and you will either want to have a happy hour after or you might get some ideas to bring back to your facility to improve patient safety.

Timothy Wiemken

Assistant Professor of Medicine
University of Louisville Division of Infectious Diseases
Louisville, Kentucky

Dr. Timothy Wiemken is an Assistant Professor of Medicine in the University of Louisville School of Medicine, Division of Infectious Diseases and the Director of Healthcare Epidemiology and Data Science Program. Dr. Wiemken has a doctorate in Public Health from the University of Louisville, where his research focused on social networks for knowledge mapping in the field of infection prevention. He obtained his Master’s Degree in Public Health at the Saint Louis University with a focus on epidemiology, and has a Bachelor’s Degree in microbiology from Southern Illinois University. He has authored and co-authored numerous manuscripts, national, guidelines, and book chapters in the field of infectious diseases. He is currently a Chair of the APIC 2017 Annual Conference Committee, and serves on the Society for Healthcare Epidemiology of America (SHEA) Nomination and Awards Committee.

Shawn Theriot has been the Quality Assurance Manager for Deschutes Brewery in Bend Oregon for the last 10-years. Shawn has worked in the Food and Beverage Industry for 20-years including several Hazard analysis and critical control points (HACCP) compliant organizations.

Shawn got his start in the brewing industry as a QA Technician with the Blitz-Weinhard Brewing Co. in Portland Oregon.

He is an active member of the Master Brewing Association of the Americas (MBAA), American Society of Brewing Chemists (ASBC) and the Craft Brewers Glass Quality Group. He holds a Master’s degree in Food Science from Kansas State University.

Alicia Hicks

Assistant QA Manager

Alicia Hicks has been with Deschutes Brewery in Bend Oregon for the last 18-years. She started as the brewery’s Lab Technician and has experienced the evolution of the QA department first hand. She is currently the Assistant QA Manager.

Alicia has worked in the Food and Beverage Industry for 21-years getting her start in the brewing industry as a Brewing Chemist with Rainer Brewing Co. in Seattle, WA.

Alicia is an active member of the Master Brewing Association of the Americas (MBAA), American Society of Brewing Chemists (ASBC) and the Craft Brewers Glass Quality Group. She holds a BS degree in Microbiology from the University of Washington with industry specific training from the Siebel Institute of Technology in Microbiology and MBAA in Packaging Technology.
